Collalto, San Salvatore Prosecco Superiore Brut is the classic Collalto Prosecco. Here you sense the full potential of the classic Glera grape. Collalto has named this Brut, San Salvatore, because the vineyard used to produce this wine is located at the top of the hill in front of the San Salvatore Castle. This vineyard receives continuous breezes and the soil type is rocky, allowing the roots to go very deep. The wine has 9 grams of residual sugar per liter, which gives an incredible balance between the acidity and its freshness.

Vinification:

Vinification: The bunches are gently pressed and the grape must runs off by gravity only. The must is then fermented in temperature-controlled steel tanks at 18 C. The wine matures in steel tanks for 3-6 months. Secondary fermentation: The wine gets its bubble formation through the Martinotti-Charmat method. After a long period of maturation, followed by wine stabilization, it is filtered and bottled. Maturation: 4-6 months in steel tanks, then 1-2 months in bottle. Residual sugar: 9 g/l. Acid content: 6 g/l

The historic castle, Castello San Salvatore, majestically overlooking the surrounding areas, is located on a hilltop near the town of Susegana. The castle is now occupied by Princess Isabelle Del Croy and is a trademark of Collalto.
