Vinification: The grapes are pressed and the grape juice is macerated on the skins for 48 hours, after which the grape juice is pressed out and stored at low temperature. The grape juice then goes into a steel tank where the wine is pressurized to create bubble fermentation. Secondary fermentation: The wine gets its bubble formation through the Martinotti-Charmat method, in a temperature-controlled steel tank at around 18 degrees. After a long period of maturation, the wine is stabilized, filtered and bottled.

Collalto is one of Italy’s most noble and prestigious names when it comes to the Conegliano Valdobbiadene Prosecco Superiore DOCG. The historic castle, Castello San Salvatore, majestically overlooking the surrounding areas, is located on a hilltop near the town of Susegana. The castle is now occupied by Princess Isabelle Del Croy and is a trademark of Collalto.
