Precise selection of the grapes both in the field, during harvest and upon arrival in the cellar on the sorting table. Soft crushing-stalking and introduction of the must into the stainless steel tanks. Spontaneous alcoholic fermentation in stainless steel at a controlled temperature of around 26°/27°C (without the addition of yeast). Maceration in this vintage was extended by around 13-15 days for Cabernet Franc and 15-17 days for Cabernet Sauvignon. Frequent pumping of oxygen and delestages repeated daily during primary fermentation resulted in musts of great elegance and marked acidity. Malolactic fermentation took place in steel vats starting in the first ten days of November and was completed at the end of the month, allowing the must to enter wood from the first ten days of December 2018. Once malolactic fermentation was completed, the wine was placed in French oak barriques, and a small part in American oak, where it was aged for a period between 20 and 25 months. The duration of aging is technically determined based on the seasonal trend of the vintage. 2018 vintage has been in barriques for 24 months

He planted Cabernet Sauvignon vines on the property and began experimenting with winemaking techniques. Over the years, the winery has become synonymous with quality and innovation. Nicolo has continued his grandfather’s legacy by using modern winemaking techniques to produce wines that are both elegant and complex. One of the most notable wines produced by Tenuta San Guido is Sassicaia. This wine is considered to be one of the best Cabernet Sauvignon blends in the world. It is made from grapes grown on a single vineyard and aged for 24 months in French oak barrels. The result is a wine that is rich, full-bodied and bursting with flavor. Another remarkable wine produced by Tenuta San Guido is Guidalberto. This wine is a blend of Cabernet Sauvignon and Merlot and is aged for 15 months in French oak barrels. It’s a more accessible wine than Sassicaia, but still exhibits the same level of quality and complexity.
