Vinification:

The wine is made exclusively from Chardonnay grapes. The grapes are fermented in large, older oak barrels, adding complexity without dominating the fruit character. After fermentation, the wine is aged in tank to preserve the freshness and savory minerality characteristic of this cuvée.

Pierre-Yves Colin-Morey established his own domaine in 2005 after working at his father’s winery, Domaine Marc Colin. Together with his wife, Caroline Morey, he has built a reputation for producing wines that accurately reflect their origin with minimal intervention during vinification.

Vineyard and Terroir

“Au Bout du Monde” is a single vineyard wine located in Hautes-Côtes de Beaune, a region known for its high-altitude vineyards that produce grapes with freshness and minerality. This specific parcel is located in Cormot-Vauchignon at an altitude of over 400 meters, which contributes to the wine’s unique character.
