Maceration and alcoholic fermentation in temperature-controlled vats for an average period of 15 days. Malolactic fermentation carried out in French oak barrels, 20% new and the remaining second passage, followed by 18 months of aging. Finally, bottle aging for around 9 months.

La Spinetta is one of the leading wineries in the Langhe and Asti regions, the winery was founded in 1977 by Giuseppe and Lidia Rivetti. Giovanni Rivetti emigrated to Argentina in 1890 to pursue his dream of finding a better life and then later returning to his homeland to become a great winemaker. He bought the first vineyards in 1977 and began producing Moscato d’Asti, a simple and light wine that can be enjoyed with all light dishes. In the following years, the Rivetti family also began a successful production of red wines, especially Barbera and Barbaresco, which resulted in 2000 in one of the most prestigious Barolos in and around Campè. All La Spinetta wines are the result of a long and meticulous work with the indigenous varieties of the area, a journey that begins in the vineyard and continues only marginally in the cellar, a natural journey without unnecessary use of pesticides and the like. The philosophy is that to achieve sublime quality, 90% of the work should be directed towards the terroir and only the remaining 10% to the work of vinification and refinement. The choice to depict the image of the “Rhino” on the label of the wines was determined by Giorgio Rivetti’s admiration for this German artist. This would probably never have happened without Gabriele Cionini, a close family friend and expert in the world of wine and art, who introduced Dürer’s works to the family. The woodcarving and illustration of the “Rhinoceros” was created in 1515, when the first rhinoceros arrived in Europe from India. Dürer made this woodcarving without ever having seen a real rhino. He drew it from a description he had. The accuracy of the drawing (apart from the scales on the rhino!) made this an inspiration for European illustrators.
