Located to the north on the border slope of Volnay, our plot of 1.42 hectares is exposed south/southeast. The soils are deep and quite clayey, the bottom contains a lot of rock head. Manual harvest on the entire estate. Whole bunch pressing after crushing.
Fermentation without added sulphur.
After light settling, fermentation in oak barrels.
Aging for 12 months in oak barrels – around 10 to 15% new barrels. Another 6 months in stainless steel tanks.
