Vinificering:

Chambolle-Musigny is a mix of the lieux-dits “Les Nazoires” and “Les Mombies”. The two plots have a total area of 0.76 hectares. Harvesting is manual and the grapes are destemmed. Fermentation is spontaneous with indigenous yeasts and takes place in stainless steel vats for 20 to 25 days. Extractions are gentle with some punching down and over-pumping. The wine is aged for 12 months in oak barrels, 20% of which are new, then in vats for 6 months before bottling.
