The grapes for Châteauneuf-du-Pape Tradition 2021 are harvested by hand to ensure optimal ripeness and quality. After careful selection, the grapes are destemmed 100% depending on the vintage.

Fermentation takes place over a period of about three weeks to a month with an initial cold maceration to extract color and aroma.

Fermentation is controlled at temperatures around 28°C to preserve the fruity character of the grapes. Grenache and Mourvèdre are aged for 18 months in concrete, enamel and steel tanks to preserve freshness, while Syrah is matured in older Bordeaux barrels to add structure through micro-oxygenation. To preserve the wine’s natural aromas, it is not filtered or clarified before bottling.

Producers Domaine Giraud

In 1998, children Marie and François took over responsibility for Domaine Giraud from their parents Pierre and Mireille, thus ensuring the continuation of the domain. Father Pierre’s wine heritage goes back more than 600 years, so you could say that they have always made wine. The vineyard covers 35 hectares, of which 8 hectares belong to a single appellation in the Galimardes district. The Galimardes terroir is particularly known for its stony soil composition, which gives the wine its minerality and the heat collected from the stones contributes to the development and ripening of the grapes. On these soils, Domaine Giraud grows Grenache, Mourvédre and Syrah. And since the children took over the vineyard, they have focused exclusively on cultivating their fields organically, with the utmost respect for each terroir. In 2008, they were able to label their wine organic producer. Their Grenache comes from century-old vines rooted in the Crau district and the Pignan plateau, these areas have a sandy soil that brings finesse and elegance to the wine. In the Les Tresquoys district, the domain has their Syrah on hilly clay soils.
