CHAINS

Vinification: It is a wine produced with late harvest grapes. After pressing-stalking and fermentation operations, with long maceration in contact with the skins for about 15-20 days, malolactic fermentation takes place. The wine is then filtered and left for refinement. Aging: in 5 hectoliter tonneaux and large 40 hectoliter barrels for 48 months, then bottled for 8 to 12 months in a vault.

Collalto Vineyard:

In the heart of Italy’s Prosecco region lies the Collalto winery, a bastion of winemaking that combines centuries of history with an enduring focus on quality. Collalto is not just the story of a winery, but also the chronicle of a family that has shaped the landscape of Susegana for generations.

The Collalto winery was founded in the early 20th century, but the family’s roots in the area can be traced back to the 12th century. The Collalto ancestral home, the imposing Castello di San Salvatore, dominates the landscape and symbolizes the family’s longstanding presence and influence. Originally, the castle served as a fortress, but as times changed, the family’s interest in wine production grew.

Renewal:

In the 20th century, the winery underwent a significant transformation under the leadership of different generations of the Collalto family. Especially in mid-century, the winery took steps to modernize its production techniques and expand its portfolio of wines. This included the introduction of advanced vinification technologies and the development of new vine varieties that could thrive in the local microclimate.

Specialization in Prosecco:

Collalto specializes in the production of Prosecco, a wine that has become synonymous with the region. Using grapes from their own vineyards, Collalto has managed to produce a Prosecco that reflects both the terroir and the family’s winemaking philosophy. Their Prosecco is characterized by its finesse, complexity and fine balance between acidity and sweetness, making it a favorite among connoisseurs.

Sustainability:

In recent times, Collalto has increased its focus on sustainability. The winery has implemented organic farming methods and focuses on sustainability at every stage of production, from water management to solar energy. This approach not only ensures a lower environmental impact, but also guarantees that the wines remain expressive and authentic.

Collalto’s role in the community:

In addition to being a leading producer of high-quality wine, Collalto also plays an active role in the local community. The winery supports various cultural and social initiatives and contributes to the preservation of the region’s cultural heritage. This commitment emphasizes Collalto’s dedication not only to wine, but also to promoting and preserving the community that surrounds them.
