Collalto, Prosecco Gaio Extra Dry DOCG has a light straw yellow color in the glass. The aroma is both complex and delicate, with notes of fresh ripe white fruit, with apple dominating, and very subtle floral notes. The acidity balances the sugar and the overall structure of the wine, making it very fresh and harmonious. Collalto, Prosecco Gaio Extra Dry. Bosco del Gaio, derived from the Lombard word “Gahagi” meaning forbidden or reserved land, is located halfway up the San Salvatore hill overlooking the south. This forest has always been a great source of wealth for the local community who find wood, game and delicious fruit here. The beautiful grove, bordering crops and vineyards, was reserved for the lords of the castle. Count Rambaldo VIII already hunted here and the berries, mushrooms and delicious chestnuts that adorned the castle banquets were gathered from this forest.

HARVEST Yield

  1. hectare: 135 quintals

Fall period: September 10-20

Vinification: soft pressing is followed by static decanting of the must and subsequent fermentation in thermo-conditioned tanks at a controlled temperature (18°C). Refinement and resting on the lees takes place in steel for a period of 3 to 6 months.

Second fermentation: the base wine is processed according to the Martinotti-Charmat method. After a period of rest on yeast, after the second fermentation, the wine is filtered and bottled.

Refinement: in autoclave 1-2 months, then 1-2 months in bottle.
