Collalto, Ponte Rosso Prosecco Extra Brut DOCG 2022 The land where Ponte Rosso is grown is not far from the castle of San Salvatore, a soil that is very clayey on a rocky bed. In ancient times, this reddish clay was the preferred material for the production of roof tiles and bricks for the construction of the houses in Collalto. The bricks produced from this clay took on such a characteristic and intense red color that when they were used to build a bridge, the bridge was named Ponte Rosso (Red Bridge). This particular soil gives the wine an amazing minerality that makes the Glera grape stand out in a very special way. In the glass, the wine is an appealing straw yellow with beautiful subtle green hues, and then a powerful cascade of pin-point bubbles that create a creamy, lively mousse that seems to last forever. On the nose, one senses fully ripe red apples with a light delicate floral background. Vinification: The clusters are gently pressed and the grape must runs off by gravity only. It is then fermented in temperature-controlled steel tanks at 18 degrees. Secondary fermentation: The wine bubbles are formed by the Martinotti-Charmat method. After a long period of maturation, followed by wine stabilization, it is filtered and bottled. Maturation: 4-6 months in steel tanks, then 1-2 months in bottle. Residual sugar: 2 g/l Acidity: 6 g/l
